Netflix and Plex use PCM audio, when they are sending it. Wether its 5.1 DD or DTS from their movies. It just sends PCM
If you set up Dolby in atv Settings, Netflix will also have Dolby, no pcm
If your audio device can take multi channel PCM then best quality is best quality. The apple tv is decoding incoming audio (e.g. dolby digital plus 5.1, common with netflix and itunes) and outputting untouched (assuming reduce loud sounds is off) PCM to audio sink.
Setting to dolby digital 5.1 forces the apple tv to encode already decoded audio to DD 5.1, which technically decreases quality. This option is necessary for some people who have devices that don't take multi channel PCM.
Question, when I disable passthrough, no ugly noise but is it output as stereo?
ATV audio is set to 5.1 Dolby Digital, MrMC audio is set as 5.1 but no passtrough. HDMI Cable goes into my LG TV and audio comes out through an optical cable into my soundbar. In this case the soundbar does not show surround. It's stereo, why?

Seems to affect the native Plex app too... I have a few movies that the audio is playing at high speed through Plex.
Same videos give noise through MrMC...
Did Apple screw the pooch on the update, or is this something they 'fixed' that now the apps need to adjust to?
It was broke in beta's for 11.3, we warned everyone to stick to 11.2. And then Apple pushed out the broken 11.3. Go figure...
I have the same problem with the ugly noise. I haven't joined any betas just updated normally. The same problem no matter what version of MrMC I try. 3.51 or 3.6 still the same problem. What can i do to get it fixed?
