Is there an option to connect to multiple Jellyfin servers I'm overlooking? Once I connect to one it seems I can only sign-off and the re-setup for the next server.

that is correct, only one server using JF manual login

Not really on our to-do list at the moment, I’ll have a look at what’s needed to add.
