Just tried the new TestFlight build and the Center channel dialog seems to be coming more towards the left channel still.
I can hear the difference by playing a DD5.1 file while toggling enable passthrough in the audio settings.
I downloaded a DTS test file and then right channel sounds a bit different than left - like maybe higher pitch. Also the rear right doesn't produce any sound while the rear left does. Center channel still seems to lean towards the left.

Stereo up mix: not selected
Boost centre channel when downsizing: 0 dB

Play GUI Sounds: only when playback stupid
Enable passthrough: selected
Dolby Digital (AC3) capable receiver: selected
DTS capable receiver: not selected

Latest build May 31 still does not solve issue. Seems like no improvement since last build.

I see what it is doing. have made a change and will push up a new testflight today. The change is risky. On the ATV4, there is a API call to get maximumOutputNumberOfChannels. There is no API to get the ATV4 audio setting but it can be inferred by maximumOutputNumberOfChannels
1) maximumOutputNumberOfChannels = 2 -> audio set to 2 channel
2) maximumOutputNumberOfChannels = 6 -> audio set to DD 5.1
3) maximumOutputNumberOfChannels = 8 -> audio set to best quality
When 2), the audio channel mapping is changed to DD mapping.

If so I don't see how that's viable. That would mean that audio from any other program wouldn't work for them.
