There is a setting regarding using mediacodec surface for SD (width < 800), which I assume was off for you.

Surface needs capture for hue, as you noticed.

On Android, Hue and other ambient lights systems work by grabbing screenshots of the whole display, so, yes, the subtitles are taking into account when averaging colors, but I'd be very surprised subtitles would modify the final color, unless they take half of the screen... Mmm... The shield never, ever, switched the HDMI colorspace automatically. It always keep the ones defined in the system settings, and present the resolution and refresh rates available in this colorspace to apps.
